Two Easy Meals in One~ Webber's Hot Pepper Relish!

Happy New Year! At the beginning of the new year Chef Roger is looking for ways to keep meal prep simple, and better yet, to create two simple and delicious meals at one time. To get a quick jump on the best flavors I mixed Webber's Hot Pepper Relish with the following. I find ground turkey really takes well to the flavors and the final dishes are not super spicy...in fact they are flavored perfectly.

Pre heat the oven at 350 degrees/ spray the pans with Pam
2lbs of Ground Pork
20ozs of Ground Turkey
3-4 cloves of minced garlic
1 jar of Webber's Hot Pepper Relish (the whole jar)
1 egg
Panko Bread crumbs
Mix well, make sure it is mixed well, get the relish throughout the meat.
Shape 14-16 medium Meatballs, place in their own pan, remaining meat shape your Meatloaf and place that in its own pan.
You may want to bake covered to keep the moisture in. To get some browning remove cover 15-20minute before it is done.
I bake for 1 hour, shut stove off and wait another 15minutes before you remove. "perfect"
Something different. Meatloaf served with mashed potatoes done in sauteed onions, garlic and whipped with "Lite" sour cream and a couple of slices of butter, salt and pepper, and a your special veg.  "Great Meal"
and your cooked Meatballs ready and waiting for the next "Great "meal.
