Zippy Omelette Party

We discovered this party idea while on vacation and decided to bring it home for a warm winter gathering of our friends. Pull these things together:

Quart size zipper freezer bags (make sure they are freezer bags)
1 or 2 large pots boiling water, depending on the number of guests
Eggs enough for 2-4 eggs per guest
Omelette fixings set up so guest can help themselves...these are suggestions:
cooked and crumbled bacon, ham and/or sausage
shredded or crumbled cheeses
chopped peppers, onions and other vegetables
chopped mushrooms or anything else you like in omelettes
Garnish as desired with hot sauce, salsa, chopped parsley or sour cream

Give each guest a freezer bag. As they hold the bag open crack their desired number of eggs into the bags. Let them cruise the omelette fixings and add in whatever their heart desires. Have the guest firmly seal the bag and squeeze the contents until the eggs and additions are well mixed. Drop the "Zippy Omelette" into the boiling water and cook until eggs reach their desired firmness. It can be as little as 4 to 5 minutes for a small omelette to 10 to 12 minutes for a large omelette with all the fixings. When they reach the desired doneness zip open the bag and pop the contents onto a plate. Garnish as desired.

We served this fun, interactive brunch with toast, coffee cake and fruit salad. Mimosas and orange juice were a must!
